<description>&#60;p&#62;I created a cookie for Christmas giveaways. This Christmas, all my relatives get a box of Coffee Squares from me. My sis told everyone that its best to eat this with a cup of hot coffee with little sugar and some cream. Now a hot favourite with my family, I share my recipe for everyone here to try.&#60;/p&#62;
&#60;p&#62;+note+&#60;br /&#62;
I am super health conscious. I don&#38;#39;t use baking powder, baking soda or essences in all my recipes. Some recipes like these cookies, don&#38;#39;t even have eggs. &#60;/p&#62;

&#60;p&#62;&#60;strong&#62;Coffee Squares&#60;br /&#62;
Recipe by Gina Choong&#60;/strong&#62;&#60;/p&#62;
&#60;p&#62;&#60;strong&#62;Ingredients&#60;br /&#62;
&#60;/strong&#62;&#60;br /&#62;
250g Butter(salted)&#60;br /&#62;
150g light brown sugar&#60;br /&#62;
2 tbsp instant coffee&#60;br /&#62;
1 tbsp Vanilla extract&#60;br /&#62;
300g plain flour&#60;br /&#62;
80g Rice flour&#60;br /&#62;
100g chocolate rice&#60;/p&#62;
&#60;p&#62;extra fine sugar for sprinkling&#60;/p&#62;
&#60;p&#62;&#60;strong&#62;Method&#60;/strong&#62;&#60;br /&#62;
1. Cream butter and sugar till light and fluffy.&#60;br /&#62;
2. Add vanilla extract, coffee, flour and chocolate rice.&#60;br /&#62;
3. Continue to whip till the dough forms and leaves the side of the mixer bowl.&#60;br /&#62;
4. Divide the dough into 3 parts. Roll into a baking parchment paper and chill the dough in the fridge for at least 4 hours.&#60;br /&#62;
5. Preheat oven at 200C.&#60;br /&#62;
6. Roll out, cut into thins and place on the baking tray.&#60;/p&#62;
&#60;p&#62;&#60;em&#62;Before baking..all lined up..&#60;br /&#62;

&#60;p&#62;7. Bake in preheated oven for 10 to 12 mins.&#60;br /&#62;
8. Sprinkle sugar on top, cool on rack, keep in air tight containers.&#60;br /&#62;
After baking...&#60;br /&#62;

Sugar sprinkling on top is purely optional. If you prefer it bitterly sweet, omit the sugar on top. If you prefer it sweeter, just sprinkle the sugar right after baking. While it is still warm.

<description>&#60;p&#62;I don&#38;#39;t sell cakes or make to sell. This cake was very special. The bride&#38;#39;s mom is a family friend and I literally watch the bride grew up from baby to adult. Her mom ask for a special cake recipe that is tweak to suit their tastes and needs. So I modified a recipe I had. Although I get orders after the wedding, I am not making it to sell. Reason is:&#60;/p&#62;
&#60;p&#62;I don&#38;#39;t have the stamina to do wedding cakes, unfortunately.  Here&#38;#39;s my recipe for the special wedding cake.&#60;/p&#62;

&#60;p&#62;I soak the cherries in a very large wine jar. And it was left outside the fridge. If you are soaking a smaller portion, you can leave it in the fridge.&#60;br /&#62;

&#60;strong&#62;Ingredients&#60;/strong&#62;&#60;br /&#62;
250g salted butter(soften in room temperature)&#60;br /&#62;
120g fine sugar&#60;br /&#62;
4 eggs(room temperature)&#60;br /&#62;
200g plain flour&#60;/p&#62;
&#60;p&#62;1 can of Dark Sweet cherries(S&#38;amp;W brand)&#60;br /&#62;
400ml Cointreau(orange liquor)&#60;/p&#62;
&#60;p&#62;&#60;strong&#62;Method&#60;/strong&#62;&#60;br /&#62;
1. Drain cherries from the can.  Put the cherries in a glass jar to soak with liquor.&#60;br /&#62;
2. Leave this jar in the fridge and covered. Soak for at least 7 days.&#60;br /&#62;
3. Drain from liquor and leave aside.  Do not discard the liquor. You can add 7 Up or Sprite to it to drink.&#60;br /&#62;
4. Whip butter and sugar on high speed for 10 minutes.&#60;br /&#62;
5. Note that you must whip until the butter look very pale yellow.&#60;br /&#62;
6. Then lower the speed, add eggs one at a time&#60;br /&#62;
7. Continue to whip for 5 mins.&#60;br /&#62;
8. Add flour and continue to whip for 2 to 3 mins or until its evenly mixed.&#60;br /&#62;
9. Lastly add the cherries. Do not turn up the speed.  Or the cherries will crush.&#60;br /&#62;
10. Pour batter into cake pans .&#60;br /&#62;
11. Baked in preheated oven 180C for 35 to 40 mins.&#60;br /&#62;
12. Leave to cool in the oven. Then removed.&#60;br /&#62;
13. Best to eat this after its aged for 1 day.

<description>&#60;p&#62;This year, I don&#38;#39;t have time to make the sugar figurines. Nor the time to make swiss rolls for log cakes. So I did this instead.&#60;/p&#62;
&#60;p&#62;3 fruit cakes, all 3 cakes have different types of fruits added, different liquer used for soaking so it will taste differently.&#60;/p&#62;
&#60;p&#62;For the cream frosting, I added Bailey Cream so the colour is off white..almost like Bailey Cream&#38;#39;s colour.&#60;/p&#62;
&#60;p&#62;Fruit Cake no 1: used Crystalised Ginger, Dried Strawberry, Apricots, Peaches as fruits. Soaked in Cointreau. Covered in 2 layers of fondant. One is tinted with Kirsch gel to have that kirsch flavour, then by Chocolate fondant. Decorations came from my store. The polar bears..!&#60;br /&#62;
