This year, I don't have time to make the sugar figurines. Nor the time to make swiss rolls for log cakes. So I did this instead.
3 fruit cakes, all 3 cakes have different types of fruits added, different liquer used for soaking so it will taste differently.
For the cream frosting, I added Bailey Cream so the colour is off white..almost like Bailey Cream's colour.
Fruit Cake no 1: used Crystalised Ginger, Dried Strawberry, Apricots, Peaches as fruits. Soaked in Cointreau. Covered in 2 layers of fondant. One is tinted with Kirsch gel to have that kirsch flavour, then by Chocolate fondant. Decorations came from my store. The polar bears..!

Fruit Cake no 2: Rum and Raisins cake and the occasional red glaced cherries..soaked daily with Rum.
Covered in bailey's cream frosting, with glaced cherries, sugar almonds


Cut and peek inside..hmm..I have more fruits in there!!

Lastly Fruit Cake no 3 : Dried Cranberries, Cherries and Sultanas, soaked in Kirsch. Covered in bailey cream's frosting..and crushed sugar almonds. To symbolise Santa in Singapore dashing thru the sand at the beach.
